Chef’s thoughts

The head chef and his team of talented chefs have put together a menu that emphasizes local, organic and sustainable ingredients inspired by the season. Whether you like meat, fish or vegetarian dishes, you’ll find something to suit your taste. Our menu consists of single dishes from the a la carte menu as well as composed dishes. You are always more than welcome to ask the waiter if you are unsure about the menu.

We strive to make everything from scratch, preferably with locally sourced ingredients. We collaborate with Enghavegård, Varde Ådal lam and Kathrinelund, among others. We also have a local collector who goes out into nature and finds things we can use in the kitchen. It can be anything from rosehips and sea buckthorn to seaweed and mushrooms. In other words, you are guaranteed a local and tasty meal when you sit down at Restaurant GRO in Varde.

In addition to enjoying local produce, we try to grow and produce a number of the ingredients we use ourselves. For example, we always do our own pickling in the summer, so we have our own products in the winter. So our dishes are simple but very tasty, made from fresh ingredients that have been treated accordingly.

We are not afraid of innovation in gastronomy. We take the time to try new things, and it’s a goal to be able to pickle in the summer so we have our own products for the winter.

It’s not just our evening menu that gets the love. We also have a delicious lunch menu that can be enjoyed between 11:00 – 15:00. The lunch menu includes everything from light lunch classics to ribeye and a variety of open sandwiches. If the weather is nice, you can even enjoy your meal on our lovely terrace.
