About the restaurant
At our hotel in Varde, you’ll find Restaurant GRO, which serves Nordic cuisine with a touch of French flair in absolutely stunning surroundings.
The restaurant is bathed in the most beautiful light, streaming in through the lovely old, lattice-paned windows. From here, there is ample opportunity to enjoy the view of the historic park, which is a delight to behold in all four seasons.
The menu is a combination of à la carte and set menus, offering both 5-course dinners and takeaway options. We also have an exquisite lunch menu, available from 11:00 to 15:00.

For me, it’s all about going the extra mile – and working with the best. In our kitchen, we focus on using local produce and make almost everything from scratch.
We work closely with producers such as Enghave Farm, Kathrinelund and Toftegaard, who share our high standards of quality. This ensures that we always have access to the ingredients that make our dishes so special. Our approach to food is simple: flavour must take centre stage, and every ingredient must be treated with respect. We are constantly experimenting with new ideas and ensure that the season’s finest ingredients feature on our menus. In summer, we preserve our produce so that we can serve homemade dishes that bring a touch of summer’s flavours to our winter fare.
The joy and energy that arise when we work with the right ingredients spread throughout the whole house. That is the feeling we want to share with you.

Restaurant GRO is Varde’s go-to destination when a meal is about more than just food. We are part of Arnbjerg Pavillonen — a historic hotel and function venue in the heart of the listed park — and since we opened the restaurant, we have strived to create a dining destination in Varde where local produce, Nordic tradition and French techniques come together on the plate.
Our kitchen takes a simple approach: flavour must take centre stage, and every ingredient must be treated with respect. This means close collaboration with West Jutland producers such as Enghave Farm, Kathrinelund and Toftegaard, who understand our high standards of quality. We preserve produce in the summer so that the winter menu has a touch of July’s flavours; we make almost everything from scratch; and we choose the season’s best ingredients rather than following a set formula. The result is a menu that changes with the seasons and constantly surprises — both our regular guests and those visiting us for the first time.
Our lunch menu is served every day of the week between 11:00 and 15:00 and is designed both for those looking for a quick business lunch and for families who want to make the week feel longer with a quiet afternoon by the window. Small lattice windows let the daylight fall across the white tablecloths, and the view of Arnbjerg Park is a seasonal delight — from winter’s green tranquillity to spring’s first blossoms. You can choose between classic dishes with a twist and seasonal open sandwich variations made with home-baked bread.
In the evening, from 5 pm to 9 pm, the anticipation rises a notch. Our 3-course and 5-course menus are designed as a journey through the seasons, and each dish is accompanied by a carefully selected wine recommendation. The menu is updated regularly, but there are always classic beef dishes, fresh fish from the West Coast and vegetarian options – no compromises. Restaurant GRO is therefore the perfect choice for anniversaries, milestone birthdays, corporate dinners and special occasions where the food must match the occasion.
Can’t get out of the house? Then we’ll come to you. You can collect your Take Away in Varde from reception by arrangement — perfect for a cosy evening in, a parents’ evening or a busy weekday dinner. The menu changes monthly and features seasonal ingredients. Order by phone or online and enjoy the same quality at your own table as our restaurant guests do.
Restaurant GRO is centrally located in Arnbjergparken — a short walk from Varde town centre and accessible by car from Esbjerg in under 25 minutes. There is free parking in front of the building, and we are wheelchair accessible. If you have any special requests, allergies, or would like to celebrate a birthday with 8 guests in a private corner, please contact us directly — we will do our best to tailor the setting to your needs.
You can book a table all year round via our online booking system or by calling us on 75 21 11 00. We recommend booking well in advance for Friday evenings, weekends and public holidays — especially when we’re fully booked for Easter lunch, Mother’s Day brunch, St. Martin’s Eve and Christmas parties. For smaller groups (under 10 guests), you can book directly online; for larger parties, we will send you a bespoke offer.
